Resveratrol (rez-vera-trol) is a naturally occurring phtyoalexin—a chemical substance produced by plants as a defense against infection by pathogenic microorganisms.

Epidemiological, in vitro and animal studies suggest that high resveratrol intake is associated with a reduced incidence of cardiovascular disease and a reduced risk for cancer. Resveratrol is found in grape vines (Vitis vinifera L.) occurring in vines, roots, seeds and stalks, but its highest concentration is in grape skins. It has several activities that may account for its possible cardioprotective action including its inhibition of the oxidation of low-density lipoprotein (LDL), inhibition of smooth muscle cell proliferation and inhibition of platelet aggregation. It has also been found to inhibit cellular events associated with tumor initiation, promotion and progression.

Resveratrol is thought to account, in large part, for the so-called French Paradox; the finding that the rate of coronary heart mortality in France is lower than observed in other industrialized countries with a similar risk profile, and has been attributed to frequent consumption of red wine.
